Jasmine Creme Caramel

Leche flan will always have a spot in my heart. Or tummy. Creamy, sweet goodness that I'll never get tired off. On one of those days when I impulse buy my baking stuff, I find myself craving for leche flan. So I made one. With a twist using my favorite jasmine tea. Here's the recipe for this light and delicate dessert. :)

Jasmine Creme Caramel
(Serves 6)

Custard Creme
1 cup milk
2 cups cream
2 bags jasmine green tea (you can substitute with whatever tea you like - I'd give earl grey a try next time)
1/2 teaspoon vanilla extract
3/4 cup sugar
3 egg yolks
2 eggs

Caramel
1/2 cup sugar
3 tablespoons water

First preheat your oven to 325 F.

Make the custard creme:

  • Combine milk, cream, and tea bags in a medium saucepan and bring to a simmer. 
  • Remove from heat and add vanilla; continue to steep for 5 to 10 minutes or until desired tea flavor is achieved.
  • In a large bowl, whisk sugar, egg yolks, and eggs to blend. 
  • Gradually whisk in hot milk mixture into egg mixture, taking care not to cook the eggs. (What I learned in the Maya Kitchen to avoid getting scrambled eggs: add about half of the hot liquid slowly, mix, then add the rest.)
  • Using a fine sieve, strain into a pitcher or measuring cup. Set aside.

Make the caramel (please see note below):

  • Place sugar and water in a saucepan over high heat. Bring mixture to a boil and let sugar dissolve without touching the mixture. (Don't be scared of the bubbles like I did. That's just the sugar dissolving.)
  • Once mixture starts to turn pale golden, swirl the pan. Continue cooking until golden.
  • Immediately remove from heat and portion on individual ramekins.
Preparing to bake:
  • Pour custard creme into ramekins then put the ramekins in a large and deep baking pan.
  • Make a bain-marie: Pour boiling water into the pan until it reaches halfway up the sides of the ramekins.
  • Cover with aluminum foil. (Do not, I repeat, DO NOT MISS THIS. The steam will make your custard watery when you take it out.)
  • Bake in a preheated 325ºF oven for about 20 to 30 minutes or just until custards are set. Remove, cover with plastic wrap and refrigerate at least 2 hours or up to 2 days.

Note:
  • If you are doing this in traditional llaneras, you can portion the sugar and water in the llaneras before heating.
  • If you have ramekins, you can serve it as is. If you are using llaneras (or other baking pans like I did), run a knife on its sides and turn it upside down on a plate or serving dish.

Almond Jasmine Milk Tea.

Aside from a cup of hot chocolate, I also find warmth and comfort in a cup of jasmine tea.

I got new glass jars at Puregold last weekend. They're not Ball. So I wanted to find out if it could withstand hot liquids. Hence me and my afternoon milk tea. Here's how you can enjoy hot tea too.

Steep a bag of your favorite jasmine tea in hot water. Pour into the jar and add milk to your liking. Lastly, add a drop or two of almond extract. Enjoy! :)

Patricia Cooks: Goma (Sesame) Dressing

It's a rare occasion when I see people munching on salad a lot. In my opinion, people who have dined at Yabu are addicted to the Goma dressing. Yes, that creamy sesame dressing you top on your unlimited cabbage. Hence, people who don't even like to eat vegetables (Hi Eunice!) are actually eating a lot of cabbage because of the highly-addicting Goma dressing.

Seeing that my co-workers are actually marinating their cabbage in the dressing, I think it is safe to say that it is a good one. On a typical lunch out made up of four or five people, we can consume the whole bottle and even ask for more. I'd personally pass up on rice and trade it for cabbage. (I hope it doesn't cause any uric acid-related problems though.)

It fascinates me how a simple vegetable complements a full Japanese meal well. I have tried different Katsu sets from Yabu as well as their Katsudon and their cabbage and goma dressing combo has never failed me yet. The best thing about it is that it's refillable! And thankfully, cabbage is quite cheap in the local markets which is why I have taken a few of my kitchen ingredients and made my own Goma dressing!

The Goma dressing is actually easy to make and it has less than ten ingredients. This usually lasts about a week or two in the fridge, but I doubt you'd make it stay in there that long. :) This recipe is quite tangy, you can adjust it to be more creamy (increase mayonnaise).

Goma dressing goes with any veggie, but I prefer to eat it with cabbage, Yabu style, with Katsudon.




Goma Dressing (Toasted Sesame Dressing)

Ingredients:
2 Tbsp + 1 tsp toasted sesame seeds

2 Tbsp Japanese Mayonaise 
2 Tbsp Rice vinegar (if you can't find rice vinegar, cane vinegar works well too)
1 1/2 Tbsp soy sauce (I used low-sodium, like Kikkoman)
1 Tsp sugar (adjust if you like it sweet)
1/2 tsp mirin (or rice wine or you can just take it away from the recipe)
1/2 tsp sesame oil




Procedure:
1. Toast the sesame seeds. Watch here to learn when to tell it's done.

2. Using a mortar and pestle, grind the toasted sesame until smooth.
3. Combine all remaining ingredients in a bowl or a clean ketchup bottle. The dressing will last in the refrigerator for a week. Enjoy!


Isn't that easy? But you know what's easier? Buy ready made Kewpie roasted sesame dressing at the supermarket. Haha!

Social Media Talk: Facebook One Column Page Timeline

If you’re a social media marketer (or community manager or whatever you call yourself) like me, you probably have this love-hate relationship with Facebook. With all these changes that happen abruptly with little announcement (or sometimes none at all), there are times you’d feel you and your at Facebook’s mercy. Read what the Daily Dot has to say about this (as shared by Mashable). One of the recent changes Page admins are dealing with right now is the new Page Timeline.

The new Facebook page layout is right-aligned and simple without looking cluttered.


Back in March, Facebook asked admins to sign up for the new layout which, based on my experience and among the fourteen pages I am managing, only one got it. Last week, Facebook made another announcement about turning all pages to the new layout by the 12th of June. Of course, admins have the option of changing their page as soon as the news came out. This includes a tour of the new layout for admins and also the option to delay the change. From Facebook, “Admins that want to update their Pages before switching to the new design can wait up to two weeks before making the switch. However, every Page will automatically switch to the updated design two weeks after the tour has been viewed.

On the bright side, Facebook should be our ally in marketing, not the enemy and there are some things we should note with this new change coming in. What I particularly love about this is that tabs are positioned in the right places, the top navigation menu and the left column, to give everyone (both admins and fans) easy access to things they want to see on the Page.

OD on the Tube: NBC’s The Night Shift

Growing up watching American TV series and OD-ing on Hollywood rom-coms doesn’t seem weird in my generation of Filipinos. I can still recall in the 90’s when I would watch Power Rangers and X-men and argue with my cousins who’s the better superhero at the time. I then moved on to watching Friends, Sabrina the Teenage Witch, even taking a peek at McGuyver and Baywatch but was too young to understand the plot. Why I skipped Dawson’s Creek, I do not know. In my teens Charmed and 7th Heaven were must-watch shows then progressed to Sex and the City, The OC, Desperate Housewives, and Grey’s Anatomy. Aside from reading and constantly writing down my thoughts, I think I owe my vocabulary and fluency in English to watching these shows.

Last month, thanks to cable TV, I got a glimpse of NBC’s new drama series, The Night Shift on BeTV. Okay, first thought, could be as good as Grey’s Anatomy. Second, that Eion Macken is smoking hot! Third, I need a break from CSI, Closer, Major Crimes and all those crime-related drama. So I waited patiently for June 1 (Philippine premiere on Sony BeTV Asia).

Here’s my take on the first episode. To be honest, I watched it again last night because I was not able to switch channels on time and missed the first 10 minutes. To be clear, I do not want to compare it to Grey’s Anatomy but it’s the only reference I have of medical-related drama. In TNS, the plot focuses on the Trauma team wherein most of the doctors are from the Army. Cases and surgeries are mostly performed in the emergency room with financial issues adding more pressure.

The plot is good enough for me. The cast gives justice to their characters so far (and from what I’ve read about the next episode). The script is well written that it seems like just a normal conversation in a real hospital. I’m kind of wondering right now if TC Callahan (Macken) and Jordan Alexander (Jill Flint) would be romantically involved in the future (they're ex-lovers) or if he’s going to go out with Landry De La Cruz (Daniella Alonso). I’m definitely looking forward to the rest of the series now.

Hot Off the Fryer: Taiwan's Hot Star Large Fried Chicken

Fried chicken is probably one of those food that will always make it on anyone's comfort food list. I could only nod my head to agree.

Last week, we had one of those days where office pantry food isn't appealing and you finally ran out of choices in the nearby mall, my coworkers and I decided to head to Blue Bay Walk in Macapagal Avenue to try what anything new.

There are a few shops open, including Payless and a kitchen store. Restaurants are operational when we went there, with "staples" such as McDonald's and Starbucks, along with an eat-all-you-can establishment. A little exploration and we found Hot Star Chicken.




Hot Star Chicken opened in the Philippines last February, all thanks to Richard Chua. Yep, the same guy behind Peanut Butter Company. (We thought it was operated by the same company that runs Army Navy because the interiors were quite the same.) Hot Star's goal is to deliver street food that is authentically Taiwanese and amazingly addictive. You can easily spot this restaurant with its bright blue exterior. Unlike in other countries where it's grab-and-go, the Philippine is the first sit-down branch.

Hot Star's claim to fame is their signature deep fried chicken breast that's about 30cm long. You can have it in three flavors: Original Large Fried Chicken (seasoned with S&P), Crispy Large Fried Chicken, and BBQ Large Fried Chicken (the original flavor glazed in BBQ sauce with sesame seeds). You can order the fried chicken alone for P110 to P125 or you could add P35 to enjoy it with rice and a regular Pepsi product drink. Other chicken choices from the menu are Chicken Popcorn, BBQ Wings and Chicken Sandwich.

The menu also includes Crispy Fish and spaghetti. You can also find Chicken Skin on the menu. You can opt for mushroom soup, mashed potatoes or fries for you sides. There's also a crunchy Fruit Salad which is a fruit salad that has chicken skin. Dessert choices are soft serve cones or Ice Crush (a milkshake-ish concoction), both of which are available in Almond or Black Gulaman flavors.

We opted to get the BBQ wings and shared among ourselves. It was good and quite tasty. It goes well with their rice gravy. Comparing it with the Korean fried chicken competitor next door, I'd go with Hot Star on any given day. Service was fast and from where we were seated, I could see the kitchen was spotless.

Based on what we ordered, I'd say I'm going to come back and try the other dishes. In my book, it's a 4 out of 5. I'd even recommend my friends to eat there.

Scattered Thoughts: Mixed Emotions on Labor Day.

As I’ve written in another post, I rarely talk about work because it’s hard to keep it professional once you need to talk about technical stuff. And I hate explaining too much about my work because 1)people assume a lot of things about it; or 2)people don’t get it at all.

Today is Labor Day in the Philippines and about 80 other countries who celebrate labor and workers. In the Philippines, it started in 1903 to demand workers’ economic rights. It’s an official public holiday, hence #laboracay is probably trending now. (Not that I have any objections to people spending their vacation in Boracay, but in reality, not everyone there is a common worker earning minimum wage or a few pesos above it and has a family to feed. – I wish we could send all employees, workers and laborers of the Philippines to Boracay to really feel that it is because of them why Labor Day is being celebrated.)

From last week up to yesterday, I have seen my coworkers plan and strategize how to go about the various Labor Day Job Fairs across the country. Spearheaded by the Department of Labor and Employment, I honestly think this is a good initiative for companies to give back to the society through the job opportunities they have to offer.

In my five years as an employee, I realized it is much more than earning. Being able to work is beyond being productive. To me it means you are a contributor, your skills are valuable to the company you work for and your pay helps sustain yourself or your family. It’s not really a monotonous (or robot-ish) way of life to be an employee. Stress, challenges and failures are just part of the ride. It makes it worthwhile.

Five years ago, I never thought I would be building a career in the call center industry. Brainwashed by people who know little about the industry, I, too, had my fair share of negative perceptions about it. In my job before joining the call center industry, I came to realize why call centers are the ones who take up majority of the job fair spaces. It dawned on me why call centers have bigger advertisements than those from the non-BPO industry. I learned more when I finally signed the contract and here I am, almost three years later, wondering what is so bad with working in this industry that even a prime time drama series would think so low of it.

I got over the fact that there will be people who think call center agents are just glorified telephone operators who get paid by sitting all day and well, talking on the phone. That’s an issue I gave up on and have learned to let go of. But yesterday, another form of insult to the industry was served to me. And I will reserve that for another day because it doesn’t deserve to be told today where employees, laborers and workers are being honored.


We all have our own set of dreams and goals in life. I personally still want to be a lawyer but I have other priorities now and that will have to wait until later. I know people who graduated from college and chose to work in a call center because they want a job or they’re probably itching to start a career and call centers happen to be everywhere. Right place, right time. I respect people who have not finished their education for reasons beyond their control and ended up in the call center industry or working entry level jobs. (Emphasize on beyond their control, because there are some who choose not to study because they don’t feel like it. These people should rot in hell. Or at least give their tuition fee money to someone else who’d be willing to graduate.)

Just like my respect for undergraduates, I have high respect for people who answer the phone, sweep the street, security guards, even those who collect the garbage and the OFWs we send off every year to provide a better future for our families. Being able to find a job and be of value to a business or a customer is something each person should take pride in.

To set the record, I do not work as a call center agent. I get to work at home because the nature of my job does not require me to be physically present in the office to perform my tasks. I have my own customers, which could be both internal and external. Contrary to what I had planned in the past, life’s irony brought me here, in a call center. It isn’t so bad and I am honestly happy with where I am today. I have a job and I love it. Would I choose a different job? Perhaps. But for now, I choose to be here. Along with the 800,000 other call center employees in the Philippines.

Why I Think the New Facebook Page Layout Is Heaven-Sent To Marketers.

If you’re a social media marketer like me (or whatever you call yourself), you probably know what I’m talking about. That Facebook NewsFeed algorithm is a pain in the ass. The new layout is a mixed emotion kind of thing (wow!, whoa!, wtf?, etc.). Facebook ads probably has ROI if you know what you’re doing. Hello marketing friends, welcome to social media (although recently it’s Facebook in the spotlight, Twitter will have to take a back seat for a couple of days with its recent changes).

I kind of avoid talking about my job that much because of several reasons. First, I might vent out and that would hurt my reputation (trying to keep everything I post PG-13 at least). Second, I might break a few company policies and cost me my job. Third, I have a lot of things to explain just to give you an idea what my job is like. Fourth, I hate being technical about things.

But this. God, I just love the new Facebook pages layout.



It’s been out for weeks now and I am so, so, so glad I made that decision to turn the pages I manage to adapt the new layout. It is easy to manage the posts. And no, I’m not talking about the Insights tab, we’ll get there later. The layout is so user-friendly, I can even teach an intern to navigate through it in five minutes!

I am assuming our fans see the same thing I see everyday on our page, and if they are, then I must say it’s definitely working for me as a marketer. It’s very simple: cover photo, important details, and stuff posted by the page. It does kind of look like the old layouts where all posts get pushed down to the bottom when a new one is published, but I think it makes the audience focused on what you just posted.

In my nearly three years with this job, I have been recycling the same status updates within a year. And with this new roll out, boom! Fans are finally starting to notice the latest update that gets posted because THAT IS THE FIRST THING THEY’RE GOING TO SEE!

I don’t know about other pages’ fans but mine even comments things that are totally irrelevant to the update. Not that it’s a big deal, but that simply means my engagement’s going up. I honestly think it made fans lazy to scroll down because the posts now take up a huge space. They’re bigger. I just feel bad for my older updates, but hey, if your fans are really that into you, they’ll take time to scroll down and keep reading your content.


So this is another reason why I don’t like to talk about work. I jump from one thing to another because there’s a lot going on! :p

Happy Birthday, Patty!

What I Would Tell Patty

You get wiser every year. At least that’s what I like to think; it keeps getting older meaningful rather than complaining becoming weak and well, old. My youth is starting to wear off (or I’m probably being paranoid), and if I could, I’d want myself today to visit my young self 5, 10, 20 years ago to tell me what life will be like when I reach 26, and how I got through every damn thing that got in my way. I think I’ve learned a lot along the way. Of course, I’m kind of bummed that my 20s is far from Monica Geller’s or Rachel Green’s or even as fun and spontaneous as Phoebe Buffay’s but hey, I think I can now relate to what I grew up watching. So if I could smack my young self’s head, here’s what I would tell me.

To the five year old Patty, life is full of surprises and you being naturally inquisitive and curious may or may not get you in trouble. Never forget why making bubbles was magical or how a vacuum machines sucks dust, and everything that gets in its way. Don’t you ever stop learning about things and life.

To the nine year old Patty, challenges will always be there in life. They do not define who you are, but how you deal with them is what matters. You’ll get over them anyway, even if not in the best way each time.

To the eleven year old Patty, when you do something, it is because you love to do it. You’re going to start writing your thoughts when you don’t know what to say. Keep writing, your voice needs to be heard, even on paper.

To the thirteen year old Patty, high school is but only a phase. It’s one of the most fun years of your life. Explore, try, make mistakes – but not all at once. You can make more later in life. Just enjoy what life has to offer as you leave childhood behind and start growing up.

To the fifteen year old Patty, your story is unique but there’s always someone out there who will understand what’s going on. Don’t be afraid to share. And listen.

To the seventeen year old Patty, be brave and resilient. Going out of your comfort zone is scary but it will help you grow. Never forget who you love and keep doing things you’d invest for your future self.

To the eighteen year old Patty, throw in some finesse. You can be brave, strong and independent even if you show your feminism.

To the twenty year old Patty, lack of sleep results in poor judgment. Don’t make it a habit. Even if you’re rushing for a deadline or something important comes up, make sure you set time for sleep. Your body’s gonna thank you a lot later. It’s also okay to spend time with people you don’t know. Get to know them, you’ll learn about yourself too.

To the twenty one year old Patty, your twenties are when you learn your mistakes. Make new ones everyday. You need to learn a lot to be ready for your thirties.

To the twenty two year old Patty, you can search the world for the right career path that suits you. Never forget what you love to do to keep you grounded.

To the twenty three year old Patty, falling in love is harder in your twenties. Choose what makes you happy and don’t grieve too much when things fall apart.

To the twenty four year old Patty, it is okay if the timeline you set when you were five isn’t happening today. Things change, you change. But you still want it to happen anyway. Always remember what you want in life to keep you going.

To the twenty five year old Patty, life brings a lot of surprises, before you know it, a tiny person is taking over your life or a grown man is asking you to give up a lot for him. Either way, you should know your worth as a woman, as a mother, as a person. What others expect from you will not define you but let your desires and dreams and how you make them happen tell the world who you are. Don’t let your fear take over.

To the twenty six year old Patty, life is not a one size fits all. You have to enjoy the ride. Being a control freak gets you nowhere.


And to whatever-years-old Patty, never forget to go out and celebrate, no matter how old you are. Here’s to surviving the last year. And here’s to facing another one.

Hurray for the Holi-date.

According to Wikipedia, 9April is the day when Filipino and American soldiers surrendered to the Japanese army during World War II, also known as The Fall of Bataan. Fortunately for the modern Pinay (working mothers specifically), we get this extra day out of office to tend to our family.

I don't have to report to work on holidays but today was a must due to backlogs and a few extra projects I want to get done. Getting paid 100% more seems like a good idea too. Since I am working from home, I made a decision to take Javier out as soon as I log off. Throw in the fact that I saw a couple of colleagues posting their holidays woth their family on Facebook makes me want to rush through the day.

The original plan was to buy Krispy Kreme donuts. Then I remembered Javier needs new slippers. So the list of stuff we need gets longer and I just couldn't wait to get out. Javier is now two and can definitely express excitement towards going to the mall, and of course shopping.

Looking for shoes and slippers for Javier is a huge challenge given that he has big feet. I have to stick to a budget because I know he gets big really fast and I just can't understand why the smallest things in the world cost more than what an average adult would need. But I am thrilled how Javier has the patience to shop for him and myself, even at the grocery, with no bribery at all. And in the 2 hours we're in the mall, he didn't ask me to carry him around that much. :)

When I felt hungry, that's when I realized he might be hungry too. We headed to Wendy's and got him Fish and Chips. He loves French fries so much and eating at a place that serves it makes dining out easy. The only problem I had was he didn't want to eat it with his bare hands and he asked for a fork. (Should I be thrilled how OC he is with his hands?)





After eating and buying shoes for myself, we finally bought Krispy Kreme donuts. Javier is just charming at the store and he wouldn't let me carry the donuts and insisted he does. (I think it's a sign I'm raising a gentleman!)




Doing the groceries with Javier was easy. No picking up unnecessary stuff, no embarrassing tantrums I've seen with other mothers, no overspending. Yahoo! I just felt bad that out of the 400 shops in Festival Mall, not one has a pair of slippers that fit my son. And I don't give up just like that. Before leaving, we dropped by the Banana Peel store.

Finally! My "Cinderella" found a pair that fits him well. Cost me Php390 but after trying on a dozen pairs, I'd gladly take this right away.




Javier was obviously tired and hungry when we got home. Two donuts and a bottle of milk later, he's knocked out on my bed. I have to be honest I got tired too. But spending the afternoon with my little prince? I'd do it again for tomorrow I have to spend some time with my laptop and work again. After all, it will just be Javier and me at the end of the day.

Rrr-Ramen Nagi Experience.

Waking up at 4 in the morning, travelling to Cavite before sunrise and racing to get to the office before 8am surely worked up an appetite.

Eunice, my co-worker, and I were talking of ramen while in transit, wondering when Ramen Nagi would finally open their branch in SM Mall of Asia. I've been anticipating it since I saw it began construction even before the week Maring hit the Philippines. Eunice on the other hand has been waiting for it after (I think) reading and hearing reviews of its SM Aura branch.

Come dinner time, another co-worker, Jason, announced that Ramen Nagi just opened their doors at SM MOA at 4:30pm. The news was enough to make me and Eunice pack up and call it a day at work.

Upon getting there, a number of servers greeted us (quite loudly, I must add) and led us to a table. Our server was Maynard and he was patient enough to walk us through the whole menu. He handed out pieces of paper to us where one would encircle their choices for their ramen. You have the freedom to customize your ramen to your liking or be safe and pick the Chef's Recommendation. A bowl will set you back about Php400, more if you have extra toppings.

Jason and Eunice shared a bowl of the classic Butao. Manuel is not a ramen person (or so he claims) so I have a huge bowl of Black King on my own. When I say huge, you can actually fit your face in the bowl. We asked if we could have leftovers wrapped to go but Maynard pointed out this little disclaimer on the menu that they do not wrap leftovers but he did say that each serving can be shared, ergo Eunice and Jason splitting the Butao.

While waiting, I find the open kitchen entertaining albeit all these Japanese greetings thqqey kept on shouting. It won't bother you muh, I guess but the cramped up space did annoy me a bit.





When our orders came, it was still boiling hot. My bowl of Black King was so aromatic, I dove in right away and slurped the broth - no condiments, no mixing, eating it the way it was served. The broth was thick enough and I knew then I will not regret having a huge bowl to myself. The squid ink touch was a good thing too.




I read on the menu (or the order slip) that first-timers are recommended to try the "1Spicy" option. It is my first time and I trust them with that suggestion. When I tasted the broth, it was spicy enough. Eunice was putting some of the condinents, spicy bean sprouts actually, on her bowl and urged me to put some. I did and it added a little more kick to my Black King.

The noodles were the right consistency for me. Again, you can have this cooked the way you want from soft to hard. The pork shoulders were soft too. It reminded me of Yabu's pork.

I had a taste of the Butao. Personally, it was too egg-y for my taste. The guys compared it to balut. Maybe that's why it didn't have an appeal to me.

Overall, Ramen Nagi was worth the wait after all these months. The serving is just right for the price, and if I were not snacking too much in the office before dinner, I would have finished a whole bowl by myself. Seeing Jason and Eunice's bowl clean, the Butao really is good. There are three more ramen bases in the menu I have yet to try. Next time I'll keep in mind to come in on an empty tummy or ask someone to share it with me.
